1. Get a bunch of tomatoes (fresh or tinned or both, we used both), onions, shallots, basil and garlic. |
2. Blanch the tomatoes. |
3. Peel the tomatoes while the onions are caramelizing with a little vinegar. Add the garlic after a few minutes and saute for a few minutes. Add the roughly chopped tomatoes and tinned tomatoes. |
4. Let simmer for a couple of hours with a couple of bay leaves. Add the basil near the end of cooking and enjoy. |
